Very Vanilla Cupcakes with Strawberry Jam Buttercream

This recipe is not only easy to follow, and relitively quick and simple to make, it produces deliciously gourmet soft cupcakes. The sweetness of the strawberry flavoured buttercream frosting pairs really well with the vanilla  – making it an ideal teatime treat, or food based gift idea to give, or share, with friends and family.

Ingredients (12 cupcakes):

1 cup all-purpose flour

¼ tsp salt

½ tsp baking soda

1 stick or ½ cup unsalted butter at room temperature

1 cup baker’s sugar

½ cup sour cream

2 eggs

2 tbsp milk

2 tbsp vanilla extract

½ tsp cinnamon* optional

Ingredients (frosting):

1 stick or ½ cup unsalted butter at room temperature

½ cup strawberry jam

4-6 cups confectioner’s sugar

Directions:

Preheat oven to 350°F degrees

In a separate bowl, mix together the flour, salt, baking soda and cinnamon* (if using)

Using an electric mixer, beat together the butter, baker’s sugar and sour cream

Add the eggs to the electric mixer one at a time until well combined

Add the milk and vanilla extract, mixing together using a spoon

Using the electric mixer, add the flour mixture from earlier, until well combined

Line a cupcake tin with cases and fill each one about ¾ full

Place in oven on middle shelf and bake for 18-22 minutes or until a toothpick comes out clean when inserted into the centre of a cupcake

Leave to cool in the tin for 5 minutes, then remove each cupcake to a wire rack and allow to cool completely

Using an electric mixer, beat together the butter and strawberry jam until well combined then add the confectioner’s sugar a cup at a time until you get the desired consistency (I used 6 cups)

Frost the completely cooled cupcakes and then serve!
