The great thing about this recipe for Salsa Chicken is that it is super easy, quick to do and can be adapted to suit your tastes by choosing what taco seasoning, salsa and cheese you use (I used mild seasoning and salsa, a sharp cheddar – and fat free sour cream to make it healthier).

Ingredients (serves 4):
Olive oil to oil baking tin
4 boneless, skinless chicken breasts
½ packet taco seasoning
1½ cups salsa
1 cup shredded cheese
4 tbs sour cream to serve
Heat oven to 375°F
Coat baking tin with olive oil (about 2 tbsp) – I used a garlic infused oil for extra flavour
Place chicken breasts in oiled baking tin and cover both sides with the taco seasoning
Cover the chicken with the salsa – I used a mild black bean and corn variety which added a depth of texture to the dish
Bake for 25-35 mins until the chicken is cooked through and juices run clear
Cover evenly with the cheese – I used a nice sharp cheddar
Bake for a further 3-5 minutes or until bubbling and golden
Serve up with a dollop of sour cream on top – it goes really well with brown rice and roasted vegetables!
